Little Star Bun 一閃一閃小星星



很久沒做包餡的,
這次做了咖哩素麵包,
另外想試不同的烤箱溫度。
所以為了確定有烤好,
撥開來咬了兩口。嘟嘟好 !!
拍照囉 !!

為了聖誕節應景,做成星形狀,
如果有聖誕樹,一定放在最頂端。

用的是網路上流傳很久的免揉麵團: (麵粉:溫水 = 2:1 / 一公斤塑膠桶)

外脆內軟的歐式麵包:
1. 三杯中筋或高筋麵粉+快速酵母1/2茶匙+鹽1/4茶匙+一杯半的溫水攪和均勻, 然後以濕布覆蓋桶口, 室溫發效三小時或等到麵糰攤平,將塑膠桶蓋上蓋子移至冰箱,隔天使用。
** 不要用密封不透氣的容器,因為麵團發酵期間會產生氣體。麵糰十天內用完。
2. 工作檯跟雙手灑上麵粉防沾,取出要使用的麵團,把麵團整成圓形,動作輕快不要揉,以免把麵團裡的空氣擠掉。濕布蓋上一小時醒麵。(如果有烤箱用紙就將麵糰放在烤紙上發酵)
3. 以450F/230C度預熱烤箱, 下層放個裝水的烤盤, 鍋具連蓋一併放入烤箱預熱。
(這個步驟就是麵包師研發出來可以以家庭烤箱烤出焦糖色酥脆外殼的秘訣)
4. 預熱完成後,倒熱水。將鍋具小心移出烤箱(鍋具極熱要小心), 打開蓋子,將發酵完成的麵團, 在不破相拉扯太多的前提下, 以最快的速度迅速放入鍋具中, 蓋上蓋子。(如果用烤箱用紙就直接將麵糰+烤紙移到鍋具裡)
5. 烤25-30分鐘, 打開鍋蓋, 再烤十五到二十五分鐘讓表面上色。

這次做包餡的在做法2醒麵完後: (餡料越乾越好)
6. 醒好的麵糰分割滾圓後,包入內餡,縮口放入模型裡,或口朝下放在工作檯上蓋上濕布做二次發酵二小時。
7. 以450℉/230℃度預熱烤箱, 下層放個空烤盤。
8. 將包餡的麵糰烤盤移入烤箱,倒熱水至空烤盤後烤40分鐘 。

No-Knead Bread :
1. 3 cups all-purpose or bread flour, more for dusting+1/2 teaspoon instant yeast+ 1/4 teaspoons salt+1 1/2 warm water-- combine in a plastic container and stir until blended. Keep dough in the room temperature for 12 hours before use or stay in the refrigerator for 10 days.
2. Lightly flour a work surface and fingers, then quickly shape dough into a ball. Cover with another cotton towel and let rise for 1 hour. (or rise the dough on the wax paper)
3. Preheat oven to 450℉/230℃. Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in oven and one extra tray as it heats.
4. When it is ready, pour the hot water into the pan and carefully remove pot from oven. Slide your hand under towel and turn dough over into pot, seam side up; it may look like a mess, but that is O.K. Shake pan once or twice if dough is unevenly distributed; it will straighten out as it bakes. (or simply move wax paper with dough into pot)
5. Cover with lid and bake 30 minutes, then remove lid and bake another 15 to 25 minutes, until loaf is beautifully browned. Cool on a rack.

For the filling result, please do following after Process 2 :
6. Divide the dough into serial pieces, add the filling and then put it into the mold for at least 1 hour before baking.
7. Preheat oven to 450℉/230℃, place one pan in the oven as well.
8. Move the dough and tray to the oven. Pour the hot water into pan and then bake for 40 minutes.
